This is a recipe we include in every camping adventure. It’s an easy, one-pot recipe.
Ingredients
- 1/2 pound sliced bacon or 1 lb. ground (browned) sausage
- 4 cups potatoes, peeled and cubed
- 1/2 onion, chopped
- 1 bell pepper, chopped
- 6 farm fresh eggs, beaten
- 1 cup shredded Cheddar cheese
- Cook bacon/sausage to desired doneness in a cast iron skillet over the slow burning coals of a campfire.
- Remove bacon/sausage from the skillet and set aside.
- Stir the potatoes and onion into the hot bacon/sausage fat.
- Cover and cook until the potatoes are soft (about 10 to 12 minutes).
- Crumble the meat into the potatoes.
- Stir in the eggs, cover, and cook until set through (about 4 minutes).
- Sprinkle with the cheese, and allow to melt before serving.

- 1 lemon
- 2 Granny apples from Farlows Orchard
- Juice together 1 lemon and 2 granny apples form Farlows Orchard.
- Enjoy! What you get is a tasty lemonade without all the white sugar.
