Campfire skillet breakfast casserole

This is a recipe we include in every camping adventure. It’s an easy, one-pot recipe.

Ingredients
  • 1/2 pound sliced bacon or 1 lb. ground (browned) sausage
  • 4 cups potatoes, peeled and cubed
  • 1/2 onion, chopped
  • 1 bell pepper, chopped
  • 6 farm fresh eggs, beaten
  • 1 cup shredded Cheddar cheese
Directions
  1. Cook bacon/sausage to desired doneness in a cast iron skillet over the slow burning coals of a campfire.
  2. Remove bacon/sausage from the skillet and set aside.
  3. Stir the potatoes and onion into the hot bacon/sausage fat.
  4. Cover and cook until the potatoes are soft (about 10 to 12 minutes).
  5. Crumble the meat into the potatoes.
  6. Stir in the eggs, cover, and cook until set through (about 4 minutes).
  7. Sprinkle with the cheese, and allow to melt before serving.


Market Master Mandy's Favorite Lemonade

This recipe was given to me by my favorite raw food chef in town, Julie Thomison.

Ingredients

  • 1 lemon
  • 2 Granny apples from Farlows Orchard
Directions
  • Juice together 1 lemon and 2 granny apples form Farlows Orchard.
  • Enjoy! What you get is a tasty lemonade without all the white sugar.
