Product List

Beef --- We have a full line of grass fed beef, including steaks, roasts, burgers, etc.  They are never fed anything synthetic, just grass!

Whole chicken --- These are pasture grown, with no hormones, antibiotics, or GMO grains.  They're tender, moist, and meaty and are perfect for roasting.

Turkeys --- These are also pasture grown, with no hormones antibiotics, or GMO grains, and are available in the Fall only.

Stewing hens --- These are pasture grown, rich in flavor, and are old, spent laying chickens.  They're not for frying or roasting, but they're great for slow cooking in soups, stews, etc.

Chicken burgers and turkey burgers --- These are seasonal items, and are seasoned like sausage.  Delicious!

Eggs --- Our eggs are pasture grown, have bright, rich yolks, and are nutrient dense.

Egg noodles --- These are made with our pasture grown eggs and organic flour.  They're available in whole wheat or white varieties.

Butter --- This is real butter with real flavor.

Maple syrup --- This is harvested from the woods behind our house.  It's wonderful in pecan pie or vanilla pudding as well as on French toast or pancakes.

Cheeses --- We have a full line of cheeses with ten different varieties.  They're made with raw milk from grass fed cows and are aged 60 days for a smooth, melting flavor.

Cooking tips and tricks

How to cook grass fed beef

Usually slow is the way to go.  Steaks and burgers can be grilled.  Roasts and similar cuts should be slow cooked and smothered in gravy, mushroom soup, tomato sauce, etc.  The following are some of our favorite recipes.

Swiss Steak

Brown the steak in a large pan.  Salt and pepper it well.  Add plenty of onions, garlic pieces, green pepper, etc. to the pan.  Add butter if needed to fry.  Pour a medium bottle of tomato sauce over all of this.  Put a lid on tightly and simmer for several hours.  Serve with baked potatoes, salad, and bread.

Cubed Steak

Melt a stick of butter in a heavy frying pan.  Dredge steaks heavily in flour.  When the butter begins to brown add the steaks to the pan and brown both sides.  Remove the steaks to a baking pan and salt and pepper well.  Add to the frying pan one can of cream of mushroom soup with enough milk to make a thick gravy.  Heat until bubbly, pour over the steaks, and bake for 30 minutes at 350 degrees.

Two Meal Chicken

Meal #1 ---

You will need one broiler chicken, salt, paprika, black pepper, assorted veggies (potatoes, carrots, squash, beets, etc.), and one large roaster pan

Rub salt, pepper, and paprika all over the chicken, and sprinkle some inside also, using about 1/2 tablespoon salt per pound of chicken, enough paprika to turn the chicken a nice color, and pepper to taste.  Put the chicken into the pan and bake uncovered for 30 minutes at 350 degrees to crisp the skin.  Pull the pan from the oven and surround the chicken with veggies, which can be added whole or diced as desired.  Cover and bake for 2 hours (give or take --- 25 minutes per pound of chicken).  Serve with salad and bread.  Spoon some of the rich broth in the bottom of the pan over the veggies.

Ahhh... this is a beautiful meal with almost no fuss and only one messy pan to clean!

Meal #2 ---
Take the bones from meal #1.  Discard any that have been gnawed upon!  Cook in
simmering water for several hours to all day in a crock pot.  Remove the bones, then
add deboned leftover chicken from meal #1 to the bone broth.  Add noodles for chicken
 & noodles or thicken with a paste made from flour and water for chicken pot pie or
dumplings.
You get two meals from one chicken, and they're quick and easy!  They're beautiful for
busy Mom's on a budget!

Chili Verde (Green Chili Enchiladas)

Ingredients:
10 - 12 flour tortillas
1 lb. Monterey Jack cheese, shredded
Sauce:
1/4 cup olive oil
1 small onion, chopped
2 large garlic cloves, chopped
1/2 tsp. ground cumin
1/2 tsp. black pepper
3 cups chicken broth
2 (4 oz.) cans green chilies, diced
1/2 tsp. oregano
1 tsp salt
2 - 3 Tbsp. flour

Heat oil in a 1 - 2 quart saucepan over medium heat.  Add onion and garlic.
Cover and cook on low for 5 minutes.  Raise heat to medium, stir in flour,
cumin, and black pepper, and cook, stirring, for 2 minutes.  Remove from heat
and gradually pour in broth, whisking to remove lumps.  Add remaining ingredients
and bring to a boil.  Cook on low and simmer 30 minutes.  The finished
mixture should be fairly thick.  Drench tortillas in this mixture and fill
with chicken and cheese.  Roll and place in a baking dish side by side.
Cover with remaining sauce and cheese.  Cover ends to keep from drying.
Bake at 350 degrees for 15 minutes.

Chicken Fritters

Ingredients:
4 cups chicken, finely diced
1/2 cup mushrooms, diced
4 cups mashed potatoes
4 eggs
1/2 cup celery, diced
1 onion, diced

Cook onion and celery until soft. Mix all ingredients together and mix well.
Add a small amount of milk to moisten as needed. Fry in hot oil.

About Us

We have happy, healthy animals with low stress and humane treatment.  We use no
pesticides, herbicides,or other toxic chemicals.  There are no hormones, antibiotics,
or unhealthy animals entering our food chain.  Grass fed meat has 2-4 times more
omega-3 fatty acids, the so called "good for your heart" fat.  Omega-3 acids are an
important building block in every cell of your body.  People with enough
omega-3 are less likely to have heart problems.  In fact, they're 50% less likely
to suffer heart attacks.  They're also less likely to suffer from depression,
attention deficit disorder, and Alzheimer's disease.  Grass fed beef also contains
CLA, the anti-cancer agent. Grain fed beef has virtually none of either of these.
Having grass fed animals also protects the environment by stopping erosion, absorbing
more rainfall, and protects our water table from contamination, and also nourishes bees,
buterflies, birds, and ladybugs.  We believe we have a responsibility towards
our Creator to nurture creation according to His design.  There's no better way
to nurture land, livestock, and family than with a pasture based farming system.

Great beef starts by choosing the right breed.  Our main breed is the Devon, known in
England as the "Butcher's Breed."  They grow easily on 100% grass and are known for great
taste and tenderness.  We use a rotational grazing system that slices the pasture
like a pie, and the cattle are served a fresh slice daily.  This allows them to
graze a lush strip of juicy green grass each day while allowing the grass ahead time to
grow and the grass behind time to rest and recuperate.  We leave baby calves with
their mamas for 6-8 months.  Cattle on pasture are happier, healthier, and cleaner
animals.  Grazing is truly the only way to grow "green," clean beef, and grazing
harvests lots of solar energy.

Our poultry are free to run on lush green grass, in fresh air and sunshine, in a system we call
"pasture pens."  These floorless structures give our birds shelter, shade, and protection
from predators, while still allowing them access to a fresh green "salad bar" each day.
We move the pens to clean fresh grass daily.  They get much of their diet from the grass,
seeds, and bugs that they find in their happy, busy wanderings.  In turn they lay eggs
with exceptional flavor plus many health benefits --- up to 14 times more omega-3 fatty acids,
high in beta carotene, and much lower in cholesterol.  So eat eggs every day and never
feel guilty again.
